Healthy Apple Rhubarb CrumblE

Recently I began eating gluten free and dairy free to help heal my son’s eczema. That doesn’t mean I have thrown sweet treats out the window. This healthy apple rhubarb crumble is a classic dessert with a twist. I love to bake and create delicious desserts but I am not a huge fan of adding cups of refined sugar into my desserts. Instead, I try experimenting with natural sweeteners like honey, dates, maple syrup and rice malt syrup. Believe it or not you get a deeper flavour when you use natural sweeteners. Plus these natural sweeteners won’t shoot your glucose levels through the roof as they sit lower on the glycemic index in comparison to refined sugar.

Why you should reduce refined sugar?

Healthy Apple and Rhubarb Crumble Recipe

Equipment

  • Food Processor
  • Large Pan
  • Apple peeler
  • Box Grater
  • Knife, Cutting Board
  • Large Baking or Casserole dish. (9/13″)

Healthy apple rhubarb crumble Ingredients

  • 1 Cup Oats
  • 1 Cup Shredded Coconut
  • 1/2 cup Sunflower Kernels
  • 1.5 Cup of Pecans or Walnuts or Cashews
  • 2.5 Tablespoons Cinnamon
  • 2 teaspoons nutmeg
  • 1 Tablespoon Honey
  • 1/2 cup coconut oil.
  • 1 tsp sea salt
  • 2 cm knob of ginger grated
  • 1 lemon – juiced
  • 6 Red Apples
  • 5 – 6 Stalks of Rhubarb
  • 1.5 cups of pitted soft dates
  • 1/2 cup of water.

Healthy apple rhubarb crumble Instructions

  1. Lightly grease 9 by 13″ baking dish with coconut oil. Pre heat the oven to 180 degrees celcius.
  2. Peel and slice all the apples into either half moons or cubes, chopp rhubarb into 1cm chunks.
  3. Roughly chop 1/2 cup pecans or your choice of nuts.
  4. Add dates and water into the food processor and blitz until a caramel type sauce forms (there may be some little chunks this is ok.
  5. Place apples, rhubarb, caramel date sauce, 2 tablespoons of cinnamon and 2 tsps of nutmeg into a large pan on.
  6. Transfer apple rhubarb mixture on the the stove at medium heat. Stir regularly until apples and rhubarb begin to soften. Add roughly chopped pecans, ginger and lemon juice and stir until combined.
  7. Meanwhile, add nuts, sunflower kernels, shredded coconut, coconut oil and oats to the used food processor bowl (we want the extra date sauce to add a bit of sweetness). Blitz to make a crumble, add in 1 tablespoon honey, 1 tsp salt, 1/2 tablespoon cinnamon and blitz until combined .
  8. Place Apple Rhubarb mixture in your baking dish and top with nutty crumble.
  9. Cook at 180 degrees celcius for 20min or until apples and rhubarb is soft and warm and crumble is golden.
  10. Serve warm with coconut yoghurt or cream.
