Hearty bone broth risotto with roast chicken and vegetables! This meal is perfect for a cold winters day and a recipe must for busy school nights.

HEARTY BONE BROTH RISOTTO….

is a family favourite! We love how easy it is to change up the flavours and add in whatever meat or vegetables you have around the home. It is a great one pot wonder and is nutrient rich! But best of all it is super easy and fast so you can have a wholesome meal ready in a flash!

Traditionally risotto is made with a creamy sauce. We decided to up the wholesome benefits of this risotto and cook it in our homemade bone broth! The bone broth deepens the flavour to give it a hearty palette. The bone broth is filled with collagen, tons of nutrients and gut healing power. If I don’t have homemade bone broth on hand I like to use nutra organics bone broth from my health food shop instead. Versatile, Quick & Easy

This recipe was created as part of my roast chicken capsule cook-up but could just as easily be made as an independent recipe. We love the versatility of this hearty recipe. Creating easy, wholesome meals with whatever you have in the house allows you to stick to home-cooked food more often, rather than ducking out for takeout.

Variations to the Hearty Bone Broth Risotto

  1. Swap the roast chicken for pulled pork, grass fed sausage or pulled ham
  2. Fry up some veggies and spinach rather than roasting them to throw in later
  3. Omit the meat and just bulk out with veggies and top with avocado, pepita seeds and feta.

HEARTY RISOTTO Equipment

  • Saucepan
  • Wooden stir spoon
  • Cutting board and knife
  • Baking tray

HEARTY Bone Broth RISOTTO INGREDIENTS

  • Roasted Vegetables
    • 1 capsicum
    • 1/2 zucchini
    • 1 carrot
    • 1/2 sweet potato
  • Diced or Shredded Roast Chicken
    • Alternatively fry some chicken thigh in broth and butter and dice
  • 1 brown onion
  • 2 tbsp butter
  • 6 cups bone broth or chicken or vegetable stock
  • 1/3 cup parmesan cheese
  • 2 large handfuls of baby spinach
  • 2tbsp Coconut or Olive Oil
  • Salt and Pepper

INstructions

  1. Preheat the oven to 180degrees celsius fan forced
  2. Dice all the roasting vegetables into 2cm chunks and put on a baking tray
  3. Drizzle some coconut or olive olive and season with salt and pepper. Mix to coat
  4. Bake roast vegetables for 40min or until golden, turn veggies over halfway.
  5. Meanwhile, bring bone broth or stock to a boil. Heat separate saucepan.
  6. Finely dice onion. Throw it into the saucepan with the butter and cook until soft.
  7. Add in Arborio rice and stir to coat.
  8. Next Pour in 1 cup of broth. Stir until absorbed. Continue this process until all 6 cups are added and rice is soft.
  9. Stir through roast veggies, chicken, parmesan and spinach.
  10. Serve immediately
