What is Spaghetti Squash?
Spaghetti squash is yellow squash cousin to the zucchini, pumpkin and other squash varieties. Spaghetti squash gets its name from the spaghetti like fibres you get once you have cooked this vegetable. This squash grows on a vine and is distinctive for its bright or pastel yellow colour and oval shape. Other names include vegetable spaghetti, noodle squash and squaghetti. The last one is my favourite =)

Why use squaghetti?
We love eating spaghetti squash at home because it is low in carbohydrates, it is a gluten free alternative. Spaghetti squash has a much more full flavour in comparison to zucchini noodles. And it is so much easier to make than zoodles! All around this pasta alternative is a great way to get your kids to try new vegetables and is generally pretty affordable when bought in season.
Buying and storing vegetable squash
Spaghetti squash is available from most grocery stores. It is oval in shape and about the size of a footy. It has a long shelf life so it is usually available all through winter and into spring. Sometimes it will also appear in late fall after it is harvested.
Spaghetti squash, similar to pumpkin can be stored in the pantry or cool room with low levels of light and an even temperature. It can keep for several weeks in this environment.

Spaghetti squash is an extremely versatile vegetable that will definitely be a hit with your kids! Low carb, gluten free and very easy to cook. It’s the perfect replacement for pasta or as a filler vegetable.
I love using spaghetti squash as alternative to pasta. The flavour is slightly sweet and tastes great with all things bolognese. We loved making lamb bolognese and topping it with feta or goats cheese over the spaghetti squash.
Other recipes we have tried is mexican beef over spaghetti squash with guacamole and sour cream. This was so delicious and a great balance of spicy, sweet and tangy!
Spaghetti squash although slightly sweet has a subtle flavour making it a great addition to any meal as it won’t overpower the flavour combination you are going for!

HOw to cook spaghetti squash?
Preheat the oven to 200 degrees.
Start by cutting your squaghetti in half lengthways.
Remove seeds/flesh from the centre, just like you would with a pumpkin.
Coat with olive oil or coconut oil about 1 tablespoon.
Sprinkle with salt and pepper.
Place on a prepared baking tray with flesh side down.
Use a fork to poke holes into the hard flesh.
Roast for 30-40 minutes.
Remove the squash and let it cool slightly.
Use a fork to scrape the flesh away from the skin. Spaghetti like strands will come off.
Use the flesh as bowl to serve your spaghetti squash. Or add it to any dish to bulk out the vegetable content.
