Kid friendly cauliflower Taco Bowl

It is so important to get our kids helping make meals in the kitchen. Especially if you have a few picky eaters in the house. If you child knows exactly what is in his dinner because he designed it himself you are already one step closer to food acceptance. Contrary to popular belief, hiding veggies for children over the age of two can actually make them less likely to try new foods.

Cauliflower Rice

Using cauliflower rather than traditional rice allows you to cut out grains and have a lighter meal. I add flavour to my cauliflower rice by steaming it with stock or garlic paste to increase the flavour palette. If you are not keen on cauliflower rice you can easily use quinoa, or brown rice. An easy way to break up the cauliflower and reduce cleanup is to simply put it in a produce bag, close it up and give it a few good hard whacks on the counter top. Sounds crazy right ! But if you hit it on the top a few times then roll it around to break it up you get nice florets and no crumbly mess. I get so excited about these little hacks and I hope this can save you time like it does me!

About a year ago I acquired a kitchen aid food processor. I love the power and convenience of this appliance. If you are in a hurry you can easily chop, grate, and puree all the different ingredients for your taco bowls in a flash. This machine is such a time saver for large families. Cauliflower Taco Bowl REcipe

Equipment

  • Food processor or blender
  • Saucepan
  • Chopping board and knife

Ingredients:

  • Roast chicken shredded
  • Red Onion finely diced
  • Capsicum finely diced
  • Carrot grated
  • A Bunch of coriander
  • Cauliflower head
  • 2 Cups sour cream or natural greek yoghurt.
  • Grated Cheese – optional
  • Easy Guacamole (Avocado, red onion, lime juice and salt and pepper) – optional
  • Corn Chips – optional

Instructions

  1. Break Cauliflower into florets and steam using chicken stock and garlic.
  2. Meanwhile, chop up all the veggies using your food processor or by hand.
  3. Heat up the roast chicken
  4. Mash and prepare avocado if using.
  5. Once Cauliflower is soft, lightly chop to form smaller grains – be careful not to over do it or you will have a puree rather than rice.
  6. Create your unique bowl by adding desired toppings and roast chicken and eat immediately.

    • Saucepan

    • 2 cups Roast chicken shredded
    • 1 Red Onion finely diced
    • 1 Capsicum finely diced
    • 1 Carrot grated
    • 1 Bunch of fresh coriander leaves
    • 1 Cauliflower head
    • 2 cups sour cream or natural greek yoghurt.
    • 1 cup Grated Cheese – optional
    • 1 cup Easy Guacamole Avocado, red onion, lime juice and salt and pepper – optional
    • 1 bag Corn Chips – optional

    Instructions
     

    • Break Cauliflower into florets and steam using chicken stock and garlic.
    • Meanwhile, chop up all the veggies using your food processor or by hand.
    • Heat up the roast chicken
    • Mash avocado and add red onion, lime juice and salt and pepper for guacamole if using.
    • Once Cauliflower is steamed, lightly chop to form smaller grains – be careful not to over do it or you will have a puree rather than rice.
    • Create your unique bowl by adding desired toppings and roast chicken on a bed of cauliflower rice.
    • Eat immediately.
