So many kids with texture challenges do not enjoy healthy baking or snacks as they are comprised of nuts or dried fruits or other texture heavy substances. The beauty of these muffins is they are smooth to taste with no lumps or crunchy bits. Omit the oats from the top if you want to make sure they are a hit. Heritage Baking
This recipe is an old favourite of mine from growing up with a twist. So thanks Mum for the recipe inspiration! So much of my love of cooking and baking as well as creating a warm home comes from my Mum. From a young age we helped her make wonderful creations in the kitchen. Speedy Banana yoghurt Muffins
I am always looking for simple healthy snacks to bake at home. The key is super quick. I also wanted to create a delicious recipe without the sugar load. Why bother eating a healthy muffin if it tastes like cardboard. These speedy banana yoghurt muffins are ready to pop in the oven in just 10 minutes and ready to eat in 25!
Healthy and full of Flavour Banana Yoghurt Muffins
Another essential for me is flavour and texture. A lot of the healthy banana muffin recipes I’ve tried use honey or rice malt syrup for sweetening. I found that this made the muffins slightly more dense. I prefer my muffins fluffy and moist.
Adding spices to your baking will amp up the flavour immensely. Experiment with different flavour combinations to figure out what you can add to your recipes!.
The secret to flavour and texture in these healthy banana muffins is the cinnamon and nutmeg, combined with the yoghurt stevia sweetener. I found using yoghurt with a hint of stevia added just enough sweetness and kept the muffins moist and fluffy. The spices added a depth to the flavour beyond the banana taste. I like to add in oats to create some interest in the muffins but this is optional.
The Banana Yoghurt Muffin REcipe
Equipment
- Muffin Tray
- Silicon muffin cups – These are great for baking regularly and reducing waste.
- Wooden Spoon or Kitchen Mixer
- Large mixing bowl
Ingredients:
- 1 cup of natural yoghurt
- 2 1/2 tsp of Stevia
- 1 Egg
- 2 Ripe Bananas Mashed with a fork
- 1 1/2 cup of flour
- a pinch of salt
- 1 tsp Baking Soda
- 1tsp nutmeg
- 1 1/2 tsp cinnamon
- 1/24cup rolled oats
Method
- Grease or use silicone muffin moulds
- Beat first 4 ingredients together
- Add Bananas and mix well
- Add the rest of the ingredients except the oats stir until combined
- stir until just mixed
- Pour in to prepared muffin tins till 3/4 full
- Sprinkle each with remaining oats
- Bake at 180 degrees Celsius for 15-20minutes
- Enjoy!

- Muffin Tray
- Silicon muffin cups
- Kitchen Mixer or Large Mixing Bowl and Spoon
Ingredients
- 1 cup of natural yoghurt Greek Natural Yoghurt works best
- 2 1/2 tsp Stevia
- 1 Egg
- 2 Ripe Bananas Mashed with a fork
- 1 1/2 Cup Flour
- pinch of Salt
- 1 tsp Baking Soda
- 1 tsp Nutmeg
- 1 1/2 tsp Cinnamon
- 1/4 cup Rolled oats
Instructions
- Preheat oven to 180 degrees celsius
- Prepare muffin tin with silicon muffin cups or grease well with butter
- Beat first 4 ingredients together
- Add Bananas and mix well
- Add the rest of the ingredients except oats and stir until combined
- Pour batter into prepared muffin tray until 3/4 full
- Sprinkle each with oats
- Bake at 180 degrees celsius for 15-20minutes
- Enjoy!
