Super Quick Healthy Banana Muffins

Deliciously moist and fluffy, naturally sweetened banana muffins. Made with natural yoghurt and organic oats. These muffins are a household favourite to add to lunch boxes or eat for morning tea!

Equipment

  • Muffin Tray
  • Silicon muffin cups
  • Kitchen Mixer or Large Mixing Bowl and Spoon

Ingredients
  

  • 1 cup of natural yoghurt Greek Natural Yoghurt works best
  • 2 1/2 tsp Stevia
  • 1 Egg
  • 2 Ripe Bananas Mashed with a fork
  • 1 1/2 Cup Flour
  • pinch of Salt
  • 1 tsp Baking Soda
  • 1 tsp Nutmeg
  • 1 1/2 tsp Cinnamon
  • 1/4 cup Rolled oats

Instructions
 

  • Preheat oven to 180 degrees celsius
  • Prepare muffin tin with silicon muffin cups or grease well with butter
  • Beat first 4 ingredients together
  • Add Bananas and mix well
  • Add the rest of the ingredients except oats and stir until combined
  • Pour batter into prepared muffin tray until 3/4 full
  • Sprinkle each with oats
  • Bake at 180 degrees celsius for 15-20minutes
  • Enjoy!
